Document mounting environment-config.yaml into docker container

      The docker installation guide should besides explaining environment parameters also document how (on the example of docker-compose) and where to mount a environment-config.yaml file.

      AT:

      • mounting a config file is documented (mount destination /optimize/environment/environment-config.yaml)
      • this change is backported to the first version that contains the docker installation documentation
