Context:
With the Release of Camunda 7.12.0 at the end of November we need to add suport for it as the new latest engine version.
AT:
- engine-latest profile uses 7.12.0
- support for 7.9.x is dropped
- cambpm integration pipeline is adjusted accordingly
- the docker-compose files are updated
- the `deployment.yml` for the ci branch deployment is updated
- the Supported Environments section in the docs is adjusted accordingly
- the Optimize Support Announcements list the raised minimum version
