Migrate from Index Templates to Composable Templates

      Since 7.8, Elasticsearch introduced composable template as a replacement for the old index templates. Now our mimimum supported ES version is 7.10, we are free to migrate to the new templating method. For now, the old index templating works but results in chatty logs with messages about using the deprecated method.
