Document the effects of full vs. audit history

      It is not clear for our C7 users what the difference is between the data available in Optimize when the engine is configured to use 'full' or 'audit' history levels. We should first test that Optimize works with both modes, before adding the differences to our documentation. The engine differences are documented here: https://docs.camunda.org/manual/latest/user-guide/process-engine/history/#choose-a-history-level, so not having 'full' will exclude at least incidents, user task assignee operations, variables updates, and perhaps more
