Remove unused libraries from Docker base image

      We use the Alpine base image when building the Optimize docker image. However, a number of CVEs get reported with Alpine and it requires some kind of assessment from Optimize each time. A simpler solution would be to simply exclude unused libraries from the base image, thus preventing the CVE reports on the built Optimize image
