Log all elasticsearch queries when debug level is trace

      AT:

      • if the logging level of optimize is set to "trace" all elasticsearch queries/requests are logged
      • the logging configuration documentation is still consistent with the implemented behavior

      Context:
      The behavior has already been implemented once with OPT-762, but has been removed with OPT-1635.
