Allow to set the process/decision definition version to latest

      AT:

      • for report evaluation, I can set the definition version to LATEST and then I get only the results of the latest definition
      • if in additional to latest, there are also other versions set, then only latest is considered in the report result
      • remove LATEST and ALL versions from the definition retrieval endpoints
      • update the REST API accordingly
