Release job should not adjust upgrade versions property anymore

      Context:
      Since we don't test multiple versions anymore in the rolling data upgrade step the release job does not need to modify the `post-migration-test` module pom. It recently caused the previous version to be present twice and we experienced build instabilities.

      AT:

      • no modification of the `post-migration-test` pom.xml from the release pipeline
