Setup and start ES Mockserver

      Initially, we should just try getting a mockserver instance running as part of our tests. It can do nothing at first, just setting up, forwarding appropriate requests to ES and closing down.

      AT:

      • Mockserver is started and runs as part of our IT setup
      • Requests to the ES Mockserver are forwarded to ES
