Remove 2.7 - 3.0 upgrade classes/tests

      We still have the Upgrade from 2.7.0 to 3.0.0 and all the associated tests, bulks and versioned DTOs as part of our codebase. We should remove the files we no longer need.

      ATs:

      • Upgrade script is removed**
      • Upgrade/Migrate ITs from 2.7.0-3.0.0 are removed
      • IndexVX classes that were added to aid testing the migration are removed
      • Bulks are removed (we don't seem to do this historically, might be good reason)
