Description

With the added integration of Zeebe, we want to increase our minimum supported ES version to 7.8, to align with features used by the ES Zeebe Exporter that were introduced in 7.8.

Documentation is updated
Default version in docker-compose files is increased
AWS ES version increased
All CI jobs use 7.8+
Announce change via support
ES compatibility job starts with versions 7.8
upgrade notes for users explaining the change
