Update Zeebe version in Optimize

      With Zeebe 1.0.1 released, the version we use in Optimize should also be updated. The dependabot PR failed already with the automatic update: https://github.com/camunda/camunda-optimize/pull/3553

      However, the reason is that the scheduler looked like it was running in the background for an unrelated test, so we should also investigate this.
