Update our documented supported Java versions

      We currently document support for Java 11 and 13. However, this is a little weird for customers as 13 is non-LTS. We should instead document that we support Java 11 in our documentation and that it may also work with non-LTS versions newer than that. In September, we should add support for Java 17 too

      • Our Java compatibility tests add support for released Java versions newer than 13
