Update docs for open api endpoint to add labels for variables

      Recently, we developed an endpoint which allows adding labels for variables by consuming the endpoint
      POST `/api/public/variables/labels`

      As this is a publicly consumed endpoint, we also need to add documentation so that users know how to consume it. The updates docs can be found here:
