Context:
The optimize docs was recently migrated to a new folder, which changed the URL for the docs.
We need to update documentation link to point to the new documentation location.

AT:

• All documentation links in Optimize application point to https://docs.camunda.io/optimize/ instead of https://docs.camunda.io/docs/components/est

Testing notes:

• check docs links in optimize if they open working pages (not 404)
