[OPT-6626] Use the analytics bridge to send BE events to Mixpanel

For consistency in Mixpanel events (and potentially anywhere else that these analytic events from Optimize will be sent), we should integrate our BE with the newly created analytics bridge rather than sending events directly to Mixpanel: https://github.com/camunda-cloud/analytic-bridge/issues/78

Note that this is not relevant for FE events at this stage.

We might be able to reuse the existing m2m token in Optimize using a new audience as described on the cloud issue
