[OPT-6883] Document missing environment variables

On https://docs.camunda.io/optimize/self-managed/optimize-deployment/install-and-start/#available-environment-variables, we specify some of the available env vars for easy configuration. However, we have since updated our config file to include many more that aren't included here. We should go through and add to the documentation page any of those that we believe to be commonly useful
