Update elasticsearch version for demo distribution of the 3.11 release

      Context:
      We are using an outdated version of Elasticsearch for the demo distribution of Optimize 3.11 (See here)

      AT:

      • Update the Elasticsearch version of demo distribution to `8.7.0` version

       

      Testing Notes: 

      • Download the 3.11.1 artefact from the download center
      • Start optimize using the `optimize-demo.sh` 
      • check the version of elasticsearch that got started
