Fix Docs Smoke Tests for latest 7.11 version

      When:
      The redirects for the latest documentation are updated with a new version (ex. 7.11).

      Then:
      The docs smoke tests fail due to expecting the old version (ex. 7.10) (see here).

      Expected:
      The docs smoke tests pass successfully.

            Note for reviewer:

            I also updated the Minor Release guide with a section for updating the versions in these tests.

            I think the camunda team should be responsible since they are part of the documentation and they will need to be adjusted whenever the documentation is changed. But i'm happy to discuss it forward
