Upgrade 7.12 CI to Java 8

    Description

      The 7.12 jobs in Jenkins still use Java 7 although we dropped Java 7 support with 7.12.
      According to Infra, going from 7 to 8 is a matter of search and replace JDK_7_LATEST with JDK_8_LATEST for the job dsl files in https://github.com/camunda/jenkins-job-dsl-seed-jobs/tree/master/jobs/7.12.

      Doing this would help us backport things that require Java 8 to 7.12 like CAM-12721.
