Simplify docs-theme build process

      I found that many things we do manually in the docs-theme, such as minification, can be achieved natively with hugo: https://gohugo.io/news/0.43-relnotes/.

      This could make the development/maintenance of themes easier and a smoother experience for our users if we can use hash and integrity attributes for all our static files. Let's investigate if this can be achieved
