When using auto generated task forms you can set the type to date but you don't have an option for datetime.

I would like to have the option to specific datetime and have the generated UI allow the user to pick a date and a time.

The variable behind the scneses that is used to hold the value entered by the user is already a datetime object so it seems like tasklist and the modeler would have to be updated to support this but not the BPM engine.
